Djævlekylling i tomat og vin

Her er endnu en yndlingsopskrift, hvor der er vin i gryden. Du kan skrue op og ned for chilien alt efter hvor hidsig, du kan lide din aftensmad. Er der børn og sarte sjæl, kan du altid toppe med ekstra chili på din egen tallerken.

Og vinen? Altså den, der ryger på kokken og ikke ned til kyllingen… Jeg kan godt lide at drikke Soave til den her slags tomatbaserede retter, men for tiden har jeg ikke lige et godt bud, så jeg vil i stedet ty til en blød rødvin.

Jeg har gode erfaring med Salento Rosso til denne ret, men jeg har netop testet en siciliansk rødvin fra Rema 1000 – Pasqua, Nero d’Avola/Shiraz, Sicilia 2019 – der passede SÅ fint sammen med det kraftige, syrlige og spicy ved min djævlekylling i tomatsauce. Læs mere om vinen her …

Djævlekylling – 4 personer

Du skal bruge

1 kvalitets-kylling

Salt og peber

Olivenolie

2-3 kviste rosmarin

2-3 fed hvidløg

2-3 dl hvidvin

2 ds. friske og modne tomater, flåede tomater eller tomatpassata

En håndfuld semidried tomater*

Chiliflager**

En håndfuld sorte oliven (soltørrede)

* Hvis du ikke kan få fat i en god kvalitet, kan du bare udelade dem. De giver tomatsaucen lidt bid og sødme, men er ikke livsnødvendige. Du kan balancere din tomatsauce med en smule sukker i stedet.

**Jeg kan virkelig godt lide de tørrede chiliflager, men er du til frisk chili, skal du bare bruge det i stedet.

Sådan gør du

Del kyllingen i to halve, og bank dem godt flade. Giv dem en gang salt og peber. Brun dem godt af i olivenolie i en tykbundet gryde. Tag kyllingen op, og skru ned for varmen. Tilsæt finthakket hvidløg og rosmarin, og lad det stege lidt. Lad ikke hvidløget blive brændt – sørg for at røre i gryden hele tiden. Kom kyllingen tilbage i gryden, og hæld hvidvinen ved. Lad det koge godt op, og tilsæt så flåede tomater, semidried tomater og chili. Lad kyllingen simre en times tid med låg på. De sorte oliven skal bare koge med de sidste 5 minutter inden servering.

Retten smager vildt godt med en risotto milanese (den man også bruger til osso buco), pasta eller bare med et godt brød til. Jeg giver den altid et godt skud parmesanflager også.
